When we find ourselves in front of the pasta shelf we are faced with an incredible choice of varieties of different brands, sizes, types and prices. If in fact, only in the last century, the choice was only between a few brands, regional and national, certainly industrial, today we have a great variety of brands especially of many new generation artisan pasta factories that offer inviting pasta shapes with different types of grains, communicating ancient recipes in practically “naked” and simple packages. In a few years, in fact, there has been a very rapid evolution of the product mainly due to a per capita drop in consumption and a growing attention by the consumer towards quality. Precisely for this reason we are much more attentive to the basic ingredients of the product: wheat, water and, why not, also air. So, going back to our shelf, what do we do first? Certainly we choose the type of pasta we like from the sight, then once we have identified the package that suits us best, we should carefully read the label to understand where and how it was produced. Since unfortunately, in terms of supply chain, the origin of durum wheat still cannot be labeled by law, at least our choice should fall towards artisan pasta where 80% should be sure to find Sicilian durum wheat or at least Italian. The cost of a homemade pasta should be on average higher. We are talking about 60/90 cents of difference from industrial pasta …. but is it worth it or not?
Of course it’s worth it. Our health is absolutely worth a few cents. And we not only help our health, but also a sector, the cereal and artisan sector, which needs to be supported. Today there are many small entrepreneurs who are changing the world of pasta and these, in my opinion, must be rewarded, also because they offer a product of excellence and high quality. The next time you go to the supermarket, or to your trusted shop, stop a little more in front of the shelves and pay attention: each pack of crafts pasta will communicate not only the quality, but the sacrifice, passion and attention of each single moment of production to this wonderful product.
